Bubbles are always the right answer; if you don't know what wine to pair or serve then the choice is bubbles.
BTW in Paris nightclubs they always pop the cork as loud as possible because they know the sound of it means it's time to get the party started plus it helps sell another bottle; brilliant marketing.
